German Potato Salad

4 large potatoes
8 strips of bacon
1 bunch of green onions

1/2 cup mayonnaise
2 T. vinegar
2T. sugar
1 t. salt


Peel the potatoes and chop into bite size pieces. Bring water to a boil in a large stock pot, and cook the potatoes until tender. While the potatoes are cooking, cook the bacon until crispy. Drain on a paper towel, then chop the bacon into small pieces. Mix the mayonnaise, vinegar, sugar, and salt in a bowl. Set aside. When the potatoes have finished cooking, drain the water and carefully cool the potatoes on a cookie sheet. Once the potatoes are fully cooled, mix all the ingredients together. Save a few pieces of bacon and green onion for the top as a garnish.
